Paleo Recipes

Crustless Steak Quiche

3 thin slices Sirloin Steak1

Shallot

2 Scallions

6 eggs

1/3 cup Almond Milk

1 tsp Sea Salt

1/2 tsp Black Pepper

  1. Brown meat on medium-high heat
  2. Preheat oven to 375.
  3. Dice shallots and brown in pan with meat.
  4. Slice scallions
  5. Whisk eggs, salt, pepper, scallions, and milk.
  6. Add meat and shallots to mixture.
  7. Pour mixture into greased 8″ pie plate
  8. Bake 20 minutes. Serves 4-6

Fish Tacos

4 Fish Filets

1 Tbsp Blackened Seasoning

Coconut or Olive Oil for coating

Habanero Pineapple Salsa
Diced Avocado

  1. Preheat oven to 400.
  2. Line a tray with foil. Brush each side with oil.
  3. Sprinkle each filet with seasoning.
  4. Bake 20 minutes.
  5. Chop or dice fish. Serve in lettuce wrap with favorite fish taco toppings. Serves 4.

Habanero Pineapple Salsa

3 cups pineapple diced

1 Habanaro pepper

1 shallot

1 handful of cilantro

1 lemon, juiced

1/8 tsp sea salt

1 tsp honey

  1. Dice pineapple. Place in large bowl.
  2. Peel shallot and cut into chunks. Place in food processor.
  3. Slice open habanero. Remove stem and seeds. Place in food processor along with cilantro. Chop until everything is diced well.
  4. Combine mixture with pineapple in the bowl. Add lemon juice, salt, and honey.
  5. Keep covered in the fridge up to a week. Makes 3 1/2 cups
cauliflower rice (1)

Cilantro Lime "Rice"

1/2 head of cauliflower

1 cup chicken broth

1 tsp sea salt

1 tsp fresh cilantro

1 tsp lime juice

sliced lime wedges for garnish

  1. Pulse cauliflower in food processor until texture is rice-like.
  2. Place broth, salt, lime juice and cilantro in a large saucepan. Turn heat to medium.
  3. Add cauliflower rice to pan. Turn heat up to high.
  4. Boil rice 5 minutes. Stir occasionally.
  5. Scoop out with a slotted spoon to remove extra broth.
  6. Serve with a wedge of lime for extra flavor. Serves 4.
